Audio is transcribed in real time and immediately discarded — Hinterflow never stores recordings. But yes, you should tell the client you're using a tool to help with documentation. Transparency is important and it's part of your consent obligations.
Every field goes through a review step before you do anything with it. You can edit, override, or clear any extracted value. Nothing is final until you say so.
